BEST HOMEMADE: Cashew Vanilla Ice Cream

  • ½ cup cashews, slightly heaping
  • 2 cups water
  • 2 bananas
  • ½ cup dates
  • ½ teaspoon Krystal Salt brine
  • ½ teaspoon vanilla extract
  • 2 droppers-full liquid Stevia (optional)

Blend cashews and 1 cup water for 1 minute. Add remaining ingredients and blend well. Freeze according to electric ice cream maker’s instructions. Makes 3½–4 cups.

Note: If raw tahini is not available (most “raw” butters sold in jars are not raw), put ¼ cup dry sesame seeds in the blender rst and grind to a powder before adding the remaining marinade ingredients.
